You're boat looks good. The reason for the bottom coat is Salt water. Most of its time it'll be in the Indian River so that extra barrier will help with corrosion. And the airboat coating will resist the damage beaching will do.

You could put a sub floor in, even with the bottom of the seats and put the floatation foam under it. Get some 5-7" pedestals and seats. Then turn the rest of the seats into storage, hatches in the wood or flip up. That will give you the safety of the foam, storage, some good even fishing...
