I did the same thing, I cut just a big enough access slot to be able to install aluminum angle underneath the bench seat, then made a plate to cover the hole, actually doesn't look bad if done right.
That hull would be excellent for duck hunting and fishing. If you want a project, and the majority of the hull is in good shape, and you have the skills to do some of the work, IMO it would be worth the effort. I would do just the basics first, fix the transom, fix the ribs and any other damage, and...

Nice job, I caught a lot of fish out of a Mirrocraft like that and always considered it to be a good boat, never leaked a drop of water either.
