Thought I would try something new Sunday. Stuffed Cornish Hens with raisins and apple slices, put on an apple rub and smoked them with apple wood at 225 for about 3 hours. Served with rice. It was pretty simple and tasty.

looks good. I've cooked cornish hens stuffed with Uncle Ben's wild grain rice for several years. I have some of those stands similar to the beer can chicken stands but these don't hold any liquid and work great for cooking hens on the grill at a low temp. Usually put the stands w/ hens in a old cake pan to avoid flare ups. Always a good meal that way.
