Gonna smoke up a 10lb butt and few racks of beef ribs this (Dayton 500) weekend.

I will start the butt tonight guessing it's going to be atleast a 15 hour burn, the ribs will go on the last few hours. I am using a new rub for both it's called good **** check out the link below.

I'm not sure if you can find it in Florida , but I use Uncle Chris's steak seasoning on large cuts of pork . It's made by the Fiesta spice company . I put it on the meat a day or so before . Everybody likes it .

I had 2 racks of ribs (Pork) and a butt on the smoker last weekend, when my wife sees beef ribs on one of the cooking shows.

She asks me what the difference is between beef ribs and pork ribs, so I explain to her that beef ribs come from a cow and pork ribs come from a pig.

She still isn't speaking to me!
