Found this recipe on line and have made it twice with excellent results. https://www.simplyrecipes.com/recipes/chipotle_lime_bacon_wrapped_shrimp/

Also grilled some bacon wrapped scallops and drizzled some chili butter on them after they came off the grill. About a half cup of clarified butter, 2 tbls chili powder, and a dash of cayenne pepper.

Forgot to take after pics but this was right after putting it on the grill

What is clarified butter?

Clarified butter has a higher smoke point than regular butter, making it useful for high heat cooking. I brush it on steaks along with a little steak seasoning before throwing them on the Weber.

Pretty easy to make. It's butter with the fat and water removed. Like you use to dip crab legs or lobster in.

gillhunter, it goes good on a steak don't it. I tried something a little different last time I made a steak. It's called reverse sear. Really only a good idea for thick steaks. They turned out great! The butter helps to get a nice flavorful sear.
