Just fired up the smoker - gonna do the holy trinity beef (Roast Beef), Pork (Butt), and a whole chicken. The veggie will be grilled corn on the cobb (has been soaking in saltwater for 12 hrs) and of coarse soom good old mashed potatoes. Hope everyone has a great BBQ weekend :beer:

And yes - I will post some pics on monday for now you will just have to trust me =P~

The Holy Trinity of Cajun cooking (Mirepoix) is onion, celery and bell pepper. Whether you're cooking Gumbo, Etoufee, or Jambalaya you always start with those three! you also see carrots, garlic and tomato substituted in for different cultures.
