Caught a little boar about 40 kg and knocked his nuts out and fed him up for a month in the sty
Scolded the rear leg and removed hair
cut through the skin to the fat and rubbed in butter salt,pepper and some cajun and smokey bar-b-q spices
Put into the Bar-B-Q roaster and onto the plate as hot as it will go for 30 minutes to get the crackle happening
Turn down to just 2 burners on low and cook until inside temp of roast reaches 150 degrees F( about an hour and a half)
Comes up a treat and tender
