Anyone do this?

I am thinking I want to do a Brisket this weekend, But I can't babysit the smoker all day. I was thinking of smoking the brisket for 2-3 hours in the smoker, then throwing it in a pan and covering it in foil, throwing it in the oven at 300 until done. I am thinking 5ish hours start to finish.

Off my rocker or possible?

It will work for sure, I would back the temp down to 225 or 250 like said earlier.

ive done it several times. keep the temp around 225,250.when you take it out,let it rest in a paper grocery bag.i know it sounds dumb but trust me,it melts in your mouth.
