Went to my discount food store today. They periodically get in some sale
items to attract you to the store to buy more than what you went in for.

This weekend was HAMS !!! End shank, bone in, cooked ham - - - 79 cents a pound !!!
Limit one per sale. I bought one, put my stuff in the car, went and got another one.
will go back tomorrow and do the same. You can't even buy CHICKEN for $.79 a pound !!!
Will put the other 3 in the freezer.

Anyway, looking at a colander I have in the kitchen, I said to myself ..... hmmmm, self ??
why not use the colander to bake the ham knuckle side down ???
So I put the ham in upside down, cut a bunch of deep holes in it, applied a 1/4" of brown sugar.
I don't like cloves and mustard and all that stuff in it ...... just plain baked ham is fine with me.
This is how it went:
put colander in a shallow pan, cover ham with foil.
bake 400* for 1 hour
drop to 350* for two hours (remove foil the last 30-45 minutes or so to brown).
take ham out of colander, put knuckle side up on foil, return to oven
bake 350-400* until skin is cooked and brown to your liking.
Use the juice to make your baste or dipping sauce.
(ham juice + wine + orange juice + etc etc etc). and reduce down to a syrup.

I don't eat very much meat. I don't have any ethical or dietary objection to eating meat, I just don't. I have an occasional burger at my local pub but beyond that not much else. I sometimes think to just give it up until I think of ham...and bacon...

oh yea, BB !! my meat of choice is fish (swahi mostly)
I can sit down and eat a pound of bacon like chips and watch a movie!!
But, I draw the line at a bacon milkshake LOl

I am about 10-15 miles from Kissimmee, FL where they will
hold the finals...... come on down and I'll have a BLT with you and we can watch the SNAKE PARADE !
 
I love the taste of bacon but only want it in limited quantities, 2-3 pieces with my eggs at breakfast and I'm done with it, or enough to make a couple of BLT sandwiches. When it comes to ham, I want it smoked. I've never been a big fan of cooked ham. Not that it taste bad or anything, I just prefer the taste of smoked vs cooked ham. If I catch smoked hams similar in size to the one Johnny has pictured on sale around the holidays, I'll try to get a couple of them. I'll take my ele carving knife to them and slice them up for sandwich meat (maybe a couple of small ham steaks), then use the food saver to vacuum pack it all up in ½ lb packs and off to the freezer it goes. When I get ready for one of the steaks, I'll just thaw it and stick it in the oven just long enough to get it warm, (never long enough to actually "cook").
 
This is making me hungry! Omg! I haven't had pig or hog in a long time. Wife's gone health on me...
 
I started this thread just to show another way of cooking ham, as it is,
for the most part, cooked pointy end up.
Not necessarily promoting the ham itself, but the colander method.

LOL I bought that colander for 50 cents at a yard sale only for the
fact it was all stainless. My others are the vintage aluminum or plastic.

The thought of putting a whole chicken in it packed with Rosemary
and other spices is next on the list.
I have never cooked a duck myself. But, I do love duck !!
And would like to hear how you would do it.
(I don't duck hunt, so I would buy one frozen at the store).
So, if you can toss in any other meats that might be cooked in this
utensil, please share your ideas. The thread is open !!
Since my wife is Chinese, we do a lot of shopping at our local China Town
and this is the way we buy our duck about once a month or so and it is delicious !!!!
