The local wholesaler has vacuum sealed slabs of Choice "boneless sirloin strip" for $4.49 per pound but in 10+pound packages. They will custom butcher it to your liking. Is this worth it if you have a family of 5 and can probably go through it fairly quickly?

They also have choice sirloin flap meat (Steak tips) for the same price........

Is there a cut thickness you recommend? 3/4 inch? 1/2 inch?

Been doing that with my fish filets for a long time, it works. Not completely air free but as good as you can get without a vacuum sealer.

Just got a new vacuum sealer myself. I like buying meat and vac sealing myself. As far as sirloin thickness, I like them thick and cooked rare. 1" minimum for me.
