Brisket was on sale this week so I picked up a 5lb. flat. On the Weber at 9:00am. Rainy here today so no fishing.

It was a 5lb flat. I did a homemade rub, put it in the fridge over night. 5 hours at 225 till it hit the stall at 160. Wrapped it. 2 more hours till it hit 201, rested it in a cooler for an hour (I left the temp probe in it and it was still 180 after the hour). It was good if I do say so myself :LOL2: .
