I agree with @MrGiggles ' suggestion.
If you want to find adaptors and are not sure of the thread, take your pump to any decent hardware store. The threads on your pump are pretty standard and you will find the fittings you need.

Thanks for circling back. Never dealt with it myself, but I've also heard about concerns with floor cover adhesive over epoxy coatings.
If by filling the voids you mean those along the edge laminations, I think you will be much happier with a putty than glue. I can't recall using PC11...

Would need something to keep the bottom of the tripod legs from splaying out. Probably easier in the long run to make 2x beam supported by a couple 2x braced posts with feet. Maybe simple ply gussets to keep it from racking. Bolt together. Disassemble when not in use.

I was thinking keep the transom a uniform thickness and reinstall the corner caps just a little forward. They would have to be removed anyway so could be reinstalled to fit the new transom thickness. Either way, a new transom top cap is in the cards.
My oldest son and his family live in Missoula. When I visited last summer we spent some time on Flathead Lake in a rented pontoon. It is beautiful country (except for me not the winters so much, haha).
Thanks for sharing the comparisons pic's. If you have to replace the transom wood anyway, I would consider redoing with a total of 1 1/2" or 1 3/4". It would require a new transom cap.
Reason I shy away from them is if there are not enough or if they are not properly adjusted they can make a hard point. Bunks are just easier and spread out the support. I think the big qualifier is knowing how to set them up no matter using bunks or rollers.
