I bought a 24v trolling motor and want to run my 12v accessories on my 24v system
I dont want a 3rd battery and do not need one
I just cannot decide if I want to buy a 24v to 12v step down transformer and run my 12v from there, or just wire up my 12v as shown in the attachment

I am not running much as far as 12v accessories, just 2 navigation lights, a bilge, and sonar
Is it really that necessary to drop my voltage from the 24v system, or will I be just fine wiring as attached off one of the batteries

The wiring in your diagram will work fine, but It is never a good idea to run a sonar on the same batteries as your trolling motor. The motor may generate interference on the sonar.
