I am currently converting an used EZ loader trailer with rollers to bunk to accommodate my 17' aluminium job boat.

What is the idea bunk length?

The trailer doesn't has center roller / support and appears not needed, basically the boat's entire weight will be supported by the two bunks and the secured by the winch tower.

Is 8' bunk adequate or better to go with 10'?

I will be using 2x6 with bunk carpet.

Thank you in advance any input will be much appreciated.

How long might be dictated by cross member placement.
Another thing might be to put a cross bunk ahead of the bunks.

My boat is a 1652 that had a roller trailer and I converted it to bunks. I went with 8' bunks but if you can find a 9 or 10 it might give you ease of mind (a 10' still might not make contact with the hull for the entire 10' though). The 2v6 might be a tight squeeze between the strakes. Here's a couple pictures of my setup.
