thinking of new boat seats

I have a 18 starcraft ss with the runabout fold down seats ( front/back ). I'm thinking about taking them out and installing two individual seats with pedestals that adjust up/down. It seems when i'm driving the boat i'm sitting on top of the old seats with one foot on the fl;oor and one on the seat. I need the seat to adjust as with nice weather I can ride it up high to look over the windshield and in colder times when I have the top and sides up I can lower the seat to ride in comfort. Also thinking of taking the old carpet out and putting vinyl on the floor for easier clean up after fishing.(just the floor cartpet, the sides are in great condition and it shouldn't be an issue with cleaning)
any suggestions on the above ? I'm thinking it should be an easy job ? would i have to do anything else other than drill holes to accommodate the pedestal base ? and any suggestions on vinyl ?

Make sure the vinyl doesn't get slippery when wet.
