T nuts will definitely work. Another option is a 1/4-20 bolt and a big fender washer on the bottom to help spread the load over a larger area. Not as ideal as a big backing plate but every bit counts. And bolt it with nylock nuts if you go that route so they won't loosen with vibration
I took my transom mount trolling motor and reversed the handle to use on the bow and just clamp it over the bow with a block of wood. I have run my boat like this for a few years and It works fine
