Don't be disappointed if you don't hit the high 20's. I could only hit 28-29 mph with 25 or 30 hp motors on a 15' boat. I got low 30's with a 40hp motor. My boat is heavier because its decked out but still..... You will hit low 20's and maybe 25 mph if the wind and current is right.

You can turn that 20hp motor into a 25, 30, or 35hp motor with a carb swap and a possibly an intake manifold (unless you can bore the existing one out to accommodate the larger throat of the new carb.

I would sell your motor and just buy a 15hp OMC motor around the same year as your current motor.
Yamaha's bring a premium in price so you might be able to sell your motor and buy a 15hp OMC and not be out any money.

A 25hp on any of the boats you mentioned won't be scary fast. I ran a 25hp on a 12' Klamath v-hull for years and it ran about right.
