I had zigzag cleats on my last boat and really liked them. I ended up putting them on my current boat for anchoring. These would of been my next suggestion if the bow eye didn't work for them. I would of through bolted them on the inside top right under the gunwale, as close to the bow as possible.
Night fishing is my favorite. Something about being out there in the calm darkness waiting for a flathead to hit. I fish on the Mississippi river. Wisconsin/Minnesota border area.
If it wasn't below the water line I would call it good. But knowing it is, my first suggestion would be to get a larger thru-hull fitting that fits that hole better.
I did this on my old jon boat that I sold. Used 3/4" carpeted plywood and a 2x6 riveted and screwed to gunnel and deck. Had all kinds of room for trolling motor, lights, lightbar, 12v/TM plug, Charger port, drink holder.
