Gar fish?

I often catch many alligator gar fish, but everyone says they are trash fish. Im just wondering if there are any special ways to cook up a gar fish? Ive heard of gar patties, but havent expiremented with them yet.

No need for all of that.

Clip the skin down the middle of the back with a pair of tin snips and skin it halfway down to the belly. Use your knife and fillet the "backstraps" off of it. Cut those into edible sized pieces and fry it like you would any other fish. Eat it while it's hot to avoid it getting tough.

It has a mild flavor but a more dense texture to it. Sort of like gator tail.
