Do any fish finders allow you to make your own maps?

Via software or something else? My main stretch of river is only about 3-4 miles long, not covered under any GPS map software and full of silverback boulders (silverback from boats going over them). I'd love to be able to plot the shoreline and nasty's to help me navigate. I don't use the fish finder for fish, only to see the depth (1-10'), speed and water temp.

Curious what options I'd have?

I chart my trail everywhere my boat goes. I also mark my waypoints and then transfer those marks to a "master map" that I've created and laminated for studying later when I'm not in the boat. I use these laminated maps (12X19 inch) to study, compare with topo maps, and prepare my game plan before I head out to any water.
 
Yeah, I do that mentally. I'd love to have live mapping. Dad's chartplotter does it with a NOAA overlay for the Chesapeake, I'd love to make one for my water.
