I started with a 14.39lb brisket. When I was done trimming, I would say it was around 13lbs.

It went in the smoker at 5:30pm at 185° for 12 hours. I did not touch it. At 5:30am i wrapped it in butcher paper and raised the smoker temp to 225°. At 9:30am i checked the temp of the brisket and it registered 174°. I raised the temp of the smoker to 250°.

At 1pm it reached 202° so i took it off the smoker and put it in cooler for 4 hours. What you see below is the final results. Total cook time was 19.5 hours
