    Doesn't take weeks, maybe a week tops, I also cure pork bellies and hams. The salt and nitrites/nitrates keep the meat from spoiling, this is the reason corned beef is corned...corned means salt. And my slicer is an Anvil 12" 1/2 HP, weighs about 80 pounds.

    I run mine at WOT, 5-6 k is nothing on a motor these days. As long as its under a load it will be fine.

    I have a 1236 and I will say you can stand in it once you get used to it, but they rock a bunch...especially with two people. I chose 1236 because it will fit in my shorty yota.

    More than 30lb for sure, I had a 30lb on the Hootch and it would only propel enough to keep me from floating down river.
