I plan on fitting my jon boat out for night fishing and was wondering what would be some good options for headlights to see with im thinking of something like this https://www.ebay.com/itm/2x18W-6INCH-FLOOD-BEAM-LED-WORK-LIGHT-BAR-DRIVING-OFF-ROAD-FOG-4WD-/231198952830?pt=Motors_Car_Truck_Parts_Accessories&hash=item35d4880d7e&vxp=mtr

Good for docking or while sitting . . . worthless while you're on the move.
Speaking from experience.

I didn't know you could have lights other than your navigation lights while under way. Can you?

I use a hand held Q-beam and have often thought about mounting it high and remotely. The problem if you don't, is the reflection inside the boat while underway and your eyes trying to focus out into the pitch black darkness coupled with the background light from the Q-beam.

best bet is use a handheld spotlight, any type of "headlight" will just cause glare. I use a spotlight that plugs into the 12v outlet and only turn it on for short periods of time to find a reference point. Depending on the size lake i almost always hug the bank on my way back to the ramp after dark.

Below is a link to what I did for headlights. They work GREAT!! No glare and light up the shallow, narrow river that I run early in the morning during waterfowl season almost comparable to daylight. The guy in the back of the boat also has a handheld spotlight, but it is rarely used. I was a bit sceptical of how well they would work, but coudn't be happier and now feel comfortable running in the dark by myself without relying on someone in the back to work a spotlight. Now, on foggy mornings they are useless but so is a handheld spotlight. I'm pretty sure driving lights are not legal, but on the river I run they are a neccessity and I've never been hassled by the DNR. If we were to ever run into another boat at 4:30 on a January morning, I'd simply be respectfull and turn the headlights off until they passed.
