Whatever you use, I would think about taking steps to keep the center drainage channel open. Whatever was there before, you sure cleaned it up nicely. Was it originally pour in foam?
It was originally shaped styrofoam. Yeah, I’m keeping the channel open.

When my Islander was redone ( previous owner) they used the pink board and some regular white styrafoam laid and cut with the center open for drainage. It was done two years before I bought it, and I owned it for almost ten years. No issues, ride was quiet, just be sure you have some type of flotation !! Up under the gunwales woukd ve a good spot as no one uses that area anyway.

Do not leave it without foam! Pour in/Sheet/Foam Stix or Block foam are all great products. also you might want to put in a couple of supports in addition to what you already have or even move the ones that are there so your plywood layout will work better. I say this because you have removed the under side of your bulkhead and thats where you will want to double up on your support. Chances are you will not be able to slide new plywood under. Least wise that was my dilemma. 1972 StarCraft StarChief.

As to the Water channel, those clog up very easily on our Crafts, better to make a bigger channel for better flow.
