the new boat I purchased has a Hummingbird 170 on the bow (transducer on trolling motor) and a Garmin on the console …….. when using the dual beam Hummingbird 170 I understand the wide beam fish will be hollow looking and the narrow beam (under the boat) fish will be solid … my question is how do you know if the wide beam fish are to the right , left , front or back of the boat when it marks them ????
 
You won't.

But each frequency will have a defined signal cone for your equipment. With that information you can at least guesstimate.

For example the Lowrance 5 HDI has these cone angles:
