Build it. Wood , Or Wood w/ Fiberglass, Or Just Fiberglass... Or go to a metal fab and have them bend/weld it. Some manufacturers sell them as options. Could try there...
Carolina skiff are considered kit boats and you buy seats/decks/consoles to install. If you wouldn't mind fiberglass you could try any dealer.. They make a variety of different center consoles for fairly reasonable price.
This link shows all the consoles they sell.. I want to say the Univ Console for the J was around $150-$200 from my local dealer.
